Delicious Chile Colorado with tender chunks of beef in a perfectly seasoned sauce.

What is Chile Colorado? Chile Colorado is a Mexican stew made with tender chunks of beef or pork simmered in a deep red chile sauce. Colorado is a Spanish word, meaning “colored red,” referring to the vibrant shade of the red sauce. The main ingredients are beef (often chuck roast or stew meat), dried Mexican chiles (like ancho, guajillo, and pasilla), garlic, onion, cumin, Mexican oregano, and broth. Chipotle peppers in adobo sauce are ripened jalapeno peppers that have been smoked and dried and packed in an adobo tomato-based sauce. Dried chiles are rehydrated and blended into a smooth, earthy, slightly spicy sauce that coats the meat as it cooks low and slow and becomes melt-in-your mouth tender.
Seed and stem dried peppers. Roughly chop all of the peppers and the onion. Dice tomato and set aside.
In a large skillet on medium heat, add 1 tablespoon of olive oil. Next add in seeded, stemmed and roughly chopped peppers. Add in the roughly chopped yellow onion. Sauté until softened and fragrant.
Next add in minced garlic cooking for a couple minutes.


Add in chicken broth stirring everything together. Bring to a boil then remove from heat and allow to steep and cool for 30 minutes.


While peppers and onions steep, trim off any unwanted fat and cut meat into 1 1/2-to-2-inch pieces. In a large skillet on medium high heat, sear the meat in batches and place the seared pieces into a crockpot on low.


Add the pepper mixture to a blender. Also add diced tomato, 2 teaspoons of cumin, salt, 1 teaspoon of Mexican oregano and 1/2 teaspoon of black pepper. Blend on high until smooth.
Pour the sauce over the meat and place the lid on. Cook until meat is melt-in-your-mouth-tender. Approximately 6-7 hours.
